So, so sorry to hear of Colin’s passing. He was a lovey human being. A great Chef and Restaurateur. He was a maverick in his own right, in a positive way. He did it his way, not pretentious, no Prima donna! He wanted to cook great food and he wanted his Brigade to do the same. He inspired so many young Chefs, encouraging and caring. The Park in Blackrock was the only restaurant I worked in that had a real team. All down to Colin…

We were very fortunate to spend a few days in Colin’s company some years ago , in Bad Hofgastein Austria ,as we shared the same accommodation.Colin was painting and he entertained us with his stories, chat , and great company….. and our boys ,now men , still talk frequently about this.

I worked with Colin many years ago at Le Cirque in Ballsbridge. I became his pastry chef and would deliver my produce everyday, he'd say: 'I love that strawberry ring Holly - keep it coming'. I remember Colin as the amazing chef at The Park Hotel when it opened . He was the chef who prepared an amazing meal at my wedding reception in The Park Hotel in 1988 .Then before Rolys he had a superb restaurant The Park in Blackrock. Then he went on to open Rolys with Roly Saul. He was a truly lovely gentle and very gifted man. He will be well remembered by many . May he rest in peace

Colin was a true gentleman, and a true artist. Whether he turned his talents to food, or painting, or business, his creativity was always something to be reckoned with.
He introduced me to my teacher Nigel Konstam in Italy, something for which I will always be grateful.
I had not seen him in many years and yet I am very saddened to think that I will not hear his unique laugh or see that twinkle in his eye anymore, but my affection for him and my memories of him will stay strong. May he rest in peace.

I was so sad to hear of Colin's passing. I will always remember him with great fondness and the animated conversations we shared about food and wine and art. Not only was he a skilful and talented chef he was also a painter with a great 'eye' for colour and texture and composition. Enjoying his wonderful food or later his paintings were equal pleasures.

Our sincerest sympathy to Sarah, Lynn, Owen Anna and the extended O’Daly family and all his friends who like my self and Jill are suffering the loss of Colin.
Colin who was of slight physical stature, a private person but a huge cheeky man of steel will determination ambition and ability as a Michelin chef of three restaurants.
In order to deal with his children’s cystic fibrosis he moved to Dublin and later teamed up with my great pal Roly Saul as the first chef of Roly’s in Ballsbridge and that’s where I first met him. I remember this shy guy who hated having to walk around and plámás customers but he did it with aplomb.
Over many glasses together with Roly he told me of his idea to raise money for the Children’s Hospital in Crumlin for accommodation for parents’ of sick children. His idea was to have a Babette’s Feast and garner great chefs around him in the Guinness Storehouse. With his normal steely subtle determination he set about it and arranged the venue sponsors of food and wine and all of his colleagues in the restaurant profession rolled behind him to deliver a spectacular evening … and it was.
Much to my surprise he asked me a few days before the big night if I would run an auction, it was my first and last one, and Colin delivered 4 great dinners in people’s homes who paid €32000 for the honour of his generosity delivering 32 dinners in their homes. He raised over €100,000 that night.
That was the first side of Colin I knew about but there were many more specifically Colin the artist where I had the honour of opening one of his exhibitions and we proudly own four of his paintings. Ultimately art was his interest where his last days were spent with his soul mate Sarah whilst they painted and she cared for him during his last happy loving days.

We will be ever grateful to him for fundraising, in conjunction with the staff of Bank of America, Dublin Branch, to develop a Recreational Center for teenagers with chronic illnesses attending Our Lady’s Hospital ,Crumlin, Dublin. He initiated this after the passing of his son , Conor, who had spent long and frequent periods in the hospital as an adolescent at a time when there were little or no facilities for his age group at the hospital.
