My deepest condolences to all of Paddy’s family and friends. I first encountered Paddy as a young commis chef just finishing two years in Cathal Brugha Street. Little did I know when joining his team at The Westbury Hotel what a profound effect it would have on my journey as a chef. I owe Paddy a huge debt of gratitude, and count myself very lucky to have been part of his team. I have nothing but happy memories of the many years I worked with him and the time I spent in Switzerland thanks to him. Rest easy Chef.

Paddy was a gentleman of the highest order and you would always be in the better of spending time in his company. He was so proud of his chosen profession as a chef and worked tirelessly to provide opportunities for young people pursuing it as he did as a career for life, this was through his mentorship in Industry and providing opportunities for chefs of all ages and levels to take part in competitions through the Panel of Chefs. He played a major role in guiding the development of the suite of National Culinary Apprenticeships and the importance was always people focused and that they were treated fairly and enabled to reach their full potential. You have left a massive gap chef but a legacy that will live on forever. Rest easy Chef Paddy Brady.

We are all sadened and effected at the loss. I known Paddy for 45 years and I hold very fond memories of those time.He was always a great spporters and I had great times which i cherish . I am so glad of all my different visits during his working career and the times I shared with Paddy.

I was so saddened to hear of Paddy’s passing. Having worked with him for 20 yrs, he left such an impression on me & my family. He was the essence of Mars for so many, the life & soul of the Irish business for so long. He was the highlight of my everyday, the cheeky, jovial banter across the bain marie. I am eternally grateful for the support & care he gave me in tougher times. He will forever hold a special place in both my heart & my family homestead. Gone but will never be forgotten.

He was the absolute heart of the place and had such a positive impact on everyone he met. He looked after us with genuine care, amazing food, a warm smile and great chats. I have so many fond memories of him. My thoughts are with you and your family and friends at this very sad time.

God both Mary and i are so saddened to hear of your passing Paddy. During your time at Mars you were so supportive to me and our small ladies during Mary's illnesses something i will never forget and am forever gratefull for.Those beautiful meals made such a difference. Such a wonderful caring and generous man never to be forgotten in our household. RIP Paddy thinking of all the family during this sad time.

Paddy was an integral part of the experience of working at Mars Ireland. All of the major events we celebrated were infused with Paddy’s influence - from special events like Christmas & Easter to the more regular days of Eggs Thursday that would bring the office to a standstill to which we all looked forward!

I have very fond memories of the way Paddy looked after us all - be it enjoying the care implied in his cooking to the perspective shared over a casual chat. For this I know I, and many others, will always be grateful.

My father PV Doyle thought the world of Paddy. He brought so much to The Westbury and I remember well the wonderful quality of his excellent cuisine. In this he was a chef ahead of his time. He inspired and trained many young chefs who have gone on to become famous all over the world.
