Little did I know when joining his team at The Westbury Hotel what a profound effect it would have on my journey as a chef. Paddy was a gentleman of the highest order and you would always be in the better of spending time in his company. He was so proud of his chosen profession as a chef and worked tirelessly to provide opportunities for young people pursuing it as he did as a career for life, this was through his mentorship in Industry and providing opportunities for chefs of all ages and levels to take part in competitions through the Panel of Chefs. He played a major role in guiding the development of the suite of National Culinary Apprenticeships and the importance was always people focused and that they were treated fairly and enabled to reach their full potential. You have left a massive gap chef but a legacy that will live on forever. Rest easy Chef Paddy Brady.

I was so saddened to hear of Paddy’s passing. Having worked with him for 20 yrs, he left such an impression on me & my family. I am so very sorry to hear the news of Paddy’s passing.

Paddy was an integral part of the experience of working at Mars Ireland. All of the major events we celebrated were infused with Paddy’s influence - from special events like Christmas & Easter to the more regular days of Eggs Thursday that would bring the office to a standstill to which we all looked forward!

I have very fond memories of the way Paddy looked after us all - be it enjoying the care implied in his cooking to the perspective shared over a casual chat. For this I know I, and many others, will always be grateful.
