I am deeply saddened to learn of the passing of Paul. A man full of charisma and a lust for life, a true bon viveur, his energy and passion will be sorely missed. What he has brought to Limerick in terms of food and restaurants can't be underestimated, he was ahead of his time. To his whole family, his former wife Alice and his daughter Louise, I offer my deepest sympathies. May he rest in peace x

I am forever grateful for the opportunities, experiences, and words of wisdom he has given me during the time that I have met him. My fondest memories of him are filled with his signature laughter, jolly nature, and unyielding kindness.

Paul Tsang had a magnificent funeral surrounded by family and friends for the last time. The candle ceremony, readings, eulogies, beautiful singing and combined Chinese and Christian rituals were a fitting tribute to a fabulously charismatic man. His kind will not be seen in Limerick again. He was a gifted chef and gentleman. Condolences to all his family. May Paul rest in eternal peace.

In the past 35 + years we have shared Paul's wit and his ever-present good-humour on many an occasion, he was such a good operator, he moved mountains to help others, no doubt he is now rewarded by being safe in the Heavens.
