At the swimming pool at the Limerick Strand, we found Dave to be a most delightful companion and a friendly face at all times. Dave was especially wonderful in bringing good humour, jokes, lively talk and pleasant chat in the early mornings, and also so helpful to many of us in practical things.

Dave’s work in catering in the hospitality sector, and his contribution to training of chefs in Ireland, drawn from his experiences in Europe, has left a lasting legacy to many people. Thank you, Dave!
