We have very happy memories of summers working in the Lodge, front of house, in the kitchen, in the rooms, bookkeeping and the end of Summer party for all staff. Des was ahead of his time with his culinary dishes, herb garden, sing songs and beloved red Alfa Romeo. May he rest in peace.

We have many happy memories of you both from summer holidays spent at Knockferry Lodge . We spent our first visit on our honeymoon, on recommendation from a friend, who raved about Des’s cooking. He wasn’t wrong. Des was a chef ahead of his time with amazing culinary skills., and we still talk about his crackling pork with rowan jelly and his breaded veal. These dishes would be more than fitting in the Michelin star restaurants that are more common now, as their specials. We also remember you Mary, for your gentleness and kindness. We can still clearly see you in the garden picking herbs , veg etc coming near dinner time. Des and you were a great team. We wen back almost every year until the oldest of our three boys became a teenager and we started to do the foreign holidays after .
We were often back visiting dear friends in Oughterard. Mrs. Fahy, Tom and Joseph at Bridge Street. We would take a drive almost on every visit down to Knockferry just for old time sake and came away with a sad but happy feeling for the good old days. Hearing of Des’s death certainly brought the wonderful memories rushing to the fore again.

My Deepest Sympathy to you Mary and to Des's Sister Fiona on his passing. He was my first paid job after working in the shop with Mom and my first entry into tourism and hospitality and he was always encouraging me to be a receptionist and get into hotels. I've such fond memories of working in the kitchen with Mrs Moran and himself, my entry to waiting on table was a disaster so he swiftly moved me to making beds with Mrs Moran and Margaret Cloonan, it was so much fun and he just simply loved to cook. He put Knockferry and Lough Corrib on the map. The Red Alfa Romeo his pride and joy too. May his gentle soul now rest in peace and he was always a pleasure to bump into in Galway since he retired.
