I worked with Eamon in Park House. It was my first part time job when I was in the Jes. Eamon was such a nice calm gentleman. People say it's hot in the kitchen - it was, but Eamon was so kind to me. Rest in peace Eamon.

Eamon was one of the most decent and respectable chefs I had met in Galway. Very fond memories of our trip to Paris. My deepest sympathy he will be a sadly missed.
