I met Eileen for the first time when I was travelling back from California with 6 Irish girls, Eileen, kindly hosted us, something I now have come to realise not so many people would be willing to do!! An incredible vivacious lady, who we enjoyed drinking Chardonnay with in the evening, and New Jersey’s best bagels in the morning.
