I was so very sorry to hear about Eileen’s passing. I wanted to let you know how fondly I remember her from my visits to Ireland. She was incredibly warm, caring and kind — truly one of the most welcoming people I’ve met. I will always remember the comfort of her company and the unforgettable taste of her Irish soda bread and scones — the best I’ve ever had.
