My sincere condolences to the Cavanagh family . I only heard yesterday about my old friend Gilbert . We had many good times in the past in Tipperary . He was always so enthusiastic about life and always in cheerful mood. May he rest in peace …. Till we meet again ???

I extend my heartfelt condolences to Elaine, Aisha, and Catherine. I am deeply saddened to hear about Gilbert's unexpected passing. I am happy to say that I had a friendship with Gilbert that spread over 30+ years. In the early years Gilbert and I shared an apartment with several other close friends, creating cherished memories and enjoying countless memorable nights out. Even as life settled into a quieter pace for us all, I would often visit the café for a chat with Gilbert, where his unique sense of humour never failed to brighten the day. Gilly had a remarkable ability to bring a smile to anyone's face, and he generously made time for everyone he encountered.

My dear friend, your absence will be sorely felt and I will really miss our chats.

Dearest Gil

One faithful day three new customers walked into your restaurant, Papa’s Bistro. Des, Tracey and Saoirse (10 months old). Saoirse is now 12 years of age and there is another staunch customer in our son Fionn, soon to be 9.

Long gone are the days of partying or going for the odd tipple. Gil’s (we don't call it Papa’s) is our place as a family to come together to spend time in each other’s company and enjoy really good food. We were hooked from the minute we walked down those steps into the restaurant back in 2012. You became part of our family Gil, you and your staff. In the early days you persevered to make Saoirse engage and talk with you… she eventually got there after much effort on your part. You welcomed us, fed us and gave me the odd glass of red wine. You have catered for both Saoirse and Fionn’s communions and no other food would be acceptable to them for their special day.

We have missed you these passed few months and it was with immense sadness and heartbreak to hear of your passing. We will continue to go to Gil’s with Saoirse and Fionn. We will continue to enjoy your food that your staff will prepare and we will talk about you and keep you forever in our hearts Gil 💙. With deepest sympathy to Elaine, Aisha and Catherine.

I'll never forget the first time I met him sitting down to eat in Papa'z. Warm, welcoming and bursting with energy. I'll always be so grateful that he trusted me to carry out what he described as, "crazy ideas", when it came to building the tables and all the other wood work we completed in the restaurant on those many late nights over the years.

You made me realise I had greater potential with your words of encouragement and advice. You were a great person and a great friend.
