Every time I peel a potato I think of my Aunty Mary. I was about 9 years old in my granny Katy Murphy’s flat in Drimnagh. My cousin Catherine and I were helping in the kitchen to peel the spuds for dinner. I had not used a sharp knife before. We both picked up a potato and started peeling. ‘Caroline Murphy!’ My aunty Mary shouted ‘you are not making chips! Up until that point I thought I was quite good. Not at all. My peels were indeed thick as chips.

So sorry to hear of Mrs Timmins passing. Such a very good neighbour to us over the years. Thoughts and prayers are with her gorgeous family at this time xxx
