So sorry to hear that Sean has passed away. The experience gained and lessons learned whilst working for him almost 30 years ago have stood to me well! Sending Tina, Roxanne, Ross, Rebecca and family my deepest sympathies.

Hearing the news of your passing, Sean has been a shock. Being one of a small few of the young allowed into your restaurant made me feel special when dining at yours. I'd say rosscarbery is lost with out you. Your such a lovely person always made me feel welcome, you will definitely be missed on next visit back home.
