We had great chats and discussions at lunch time and over coffees. I have very fond memories of Tim and was so saddened to learn of his sudden and unexpected death.

His passion for the chemistry of breaking apart complex mixtures and building new ones continued to drives his scientific interests and his excellent scientific writing skills. I shared a lab with Tim in my early research days and can still hear his distinctive voice and laughter. May he rest in peace.

I am so sorry to see the news of Tim's passing. We met when he was a fresh graduate teaching in Sligo RTC. A true friend, mentor, deep thinker, Philosopher, comic. He is only man I have ever been out for a pint with and discussing the interfacial chemistry of the head of Guinness. From our Dairy farm he was able paint for me, a clear picture of milk, processed milk, yoghurt, cheese and many other concepts to help navigate life. These were only the appetizer to a bigger world of food that, inspired by Tim, I have made a career. While working on Dairy, he was always a trusted advisor and helped navigate collaborations. I fondly recall going to Moorepark on one of his "days off" and ending up spending afternoon and evening with Tim and Mary.
I offer you my deepest condolences. As you see from the numerous testimonials, Tim made a mark that had impact far beyond his beloved Cork. You can be so proud of him. RIP Tim!

It was so very sad to hear of our beloved Tim's passing here in New Zealand. Although we had not seen each other for many years I still have fond memories of a very passionate and inspirational man who helped move the dairy industry forward by his professional work. Tim was also such a personable and caring person and will be sadly missed. On a personal note I still remember the day KJ and I showed you how to BBQ meat the New Zealand way! Sincere condolences to Mary, Aoife, Tiernan, Muireann, and the extended Guinee family on Tim's sad passing. Tim was a true scholar, mentor, and friend. He gave many, including myself, the knowledge, confidence and encouragement to pursue a career in food science, ultimately defining a path in life. His dedication, passion and knowledge inspired all of us who had the pleasure of studying with him. Tim was known around the world for his knowledge of Dairy Science by academia and industry alike. You couldn’t get a seat at Tim’s seminars, where attendees listened tentatively to his in-depth explanations of dairy chemistry, hoping to apply what they had learned to their own work. I enjoyed travelling with Tim while listening to history and learning about his interest in cultures, politics, and society. Tim’s love of learning and ability to conceptualise and share innovative approaches was astonishing. He had a unique ability to apply scientific principles to real-world applications, developing a new way of working at Teagasc that has inspired colleagues ever since.
Thank you Tim, for being my mentor, sharing the ‘ups and downs’ of experiments, and for all the fun we had figuring out problems in work and life. I will miss our chats and debates. May you rest in peace; you have gone now to that scholarly place. Thanks for everything.

Our deepest sympathies to Mary, Aoife, Tiarnan and Muireann on the very sad and untimely passing of Tim. I worked closely with Tim when he joined the Kerry Group in the late '80s. He was a brilliant dairy scientist with a great passion for cheese and we spent hours in the pilot plant, both day and night perfecting our formulations. Tim was excellent company and we had great(and heated) debates on varied subject matters. I last met Tim at Prof Fox's funeral- he was in great form as usual. Like PF Fox, Tim has left a huge dairy legacy and will be sorely missed by friends and colleagues.

His life was truly blessed in every way: a heart filled with passion, love and empathy, a family that meant the world to him, hobbies, travel, a path marked by success, recognition, unwavering dedication, and discipline. Real improver/ innovator/impact creator in everything- He gained knowledge through relentless hard work, brilliant mind and creativity, and generously shared it with others, teaching, mentoring, and lifting everyone around him. No question was too small, no challenge too great — he helped anyone who sought improvement, guidance, or clarity.
His journey was intense and unstoppable, like a snowball gathering strength and purpose as it rolled forward. He lived with purpose, applied high-standards and quality to everything he did, great touch of humor, respect for others, compassion, and an immense love for his family and commitment to work/colleagues/student/partners.

Rest in peace Tim. I am deeply grateful that our paths crossed in this life. You will be deeply missed but forever remembered.
