TJ was a such a lovely presence in the Food Emporium over the years & I have wonderful memories of he & Brenda opening such an innovative & most welcome business in Ennis so many years ago. However, their greatest achievement in their tragic & all too short lives, was the rearing of Fionn & Ronan. You young men both do yourselves & your late parents proud. My sincerest & most heartfelt condolences to you both on the loss of your wonderful Dad. I feel so sad for all who mourn TJ's loss. May his good soul rest in eternal peace.

Outside of being a talented chef he was also a builder and a collector of antiques and a small farmer. He will be greatly missed. The light of heaven to him.

God bless TJ’s lovely soul. The townspeople of Ennis owe TJ and his beautiful late wife Brenda a huge debt, they brought modern cookery and fine dining to our county town in the 1980s and both were excellent hosts. We had our own Ennis Fair long before Donnybrook thought it up! TJ was one of Feakle’s first ambassadors. What a gentleman. Condolences to his sons, extended family and Feakle friends.
