It’s taken me a little while to write this as I can’t the find the right words to Express the relationship that we had not just as a boss/chef but as friends, as Vince was more like my brother he always looked after me not only for the 17years we worked together, but ever since we met. To Louise, Greg and family, so sorry to you all on the loss of your father. Over the 30 years I have known him he was a true gentleman and always very generous and hospitable.

We have so many good memories of Vincent going back for many years. We so valued his friendship and his enduring kindness.

Vince wasn’t just someone I trained he was someone I truly respected.

He showed up with determination, always gave his best, and never failed to share a laugh.

One thing he told me that stuck with me was: ‘Don’t worry you’ll always meet people along the way.’ Meaning that life has a way of bringing the right people at the right time.

He was one of those people. I’m grateful I met him, and I’ll carry that reminder forward.

Rest in Peace dear Uncle Vincent. A kind and gentle uncle to me and a wonderful and beloved brother to my mum. I remember well fun visits to Uncle Vincent’s pubs in both Ireland and England, as a little girl. Then bringing my own baby and toddler to visit him at his beautiful home in Mayo.
